why isn't everything at Sticks'n'Sushi organic?
Organic often translates to a farming practice in which quality is more important than quantity. A farming practice that does not exploit available resources. A farming practice concerned about the welfare of the animals and its employees. And a farming practice that does not impact the environment through the use of fertilizers and pesticides. But something that is organic is not necessarily sustainable as well. Sadly, it's often more complicated than that. For example, organic fruit is not very sustainable if it has been transported by plane.
Thus, organic isn't necessarily always climate-friendly. And then out goes the easy solution. On one hand, one might prioritize organic and gentle farming practices. But on the other hand, one might also find it worth prioritizing the climate challenges caused by transportation. What to do? There's no easy solution.
Here at Sticks'n'Sushi, our solution has been to consider the pros and cons on a case-by-case basis. Every time. This is not an easy task, but that goes for our work on sustainability in general. There is no magic bullet. We want to have as many organic products on our menu as possible, but without causing any unnecessary harm to the climate.
