the action plan
The so-called Sushi Stainable action plan was developed as a way for us to make the sustainability tasks within our own four walls more tangible. Under the plan, different elements of the entire sustainability initiative were divided into separate categories, such as electricity, water, heating, menu, suppliers, etc. This being done, each category was divided once again into separate tasks.

The action plan has provided us a general
overview of the magnitude of the project, plus it has helped us
prioritize specific tasks and decide where to begin. Today, this plan is
essential to our work, specifically because it has helped us transform
the elusive concept of sustainability into a tangible and concrete
process.
The action plan has now been expanded to
include deadlines for each task, as well as delegate responsibility for
specific tasks. This ensures us that everybody knows exactly what is
going on at any given time and what their potential role might be.
